Lime Pomegranate chicken salad

This recipe is easy and healthy.  It's clean eating at its best, and tastes amazing.  

This will take about 10 minutes to make.  Cook two chicken breasts in a skillet with olive oil, sea salt, and pepper.  While the chicken breasts cook, cut up your avocado, chop the cilantro, harvest your pomegranate seeds, and squeeze your lime juice.  Toss this all into a medium bowl, once the chicken is done, cut it up and mix into your prepared bowl.  Eat warm or cold.  Serves 2-3 people.

My blog about family, food, crafting & life.

I am Crystal.  I live in Minnesota, as I write, it is a brisk -16 degrees with windchill outside.  On days like this it doesn't matter if I am out of butter and eggs, we will make do with what is in our toasty home.  I have a deep love for finding beauty in old things, some new things, but mostly created things.  I thought a blog would be a great way to share, ideas, inspiration, recipes, and beauty. A little about me... I have to craft something daily in order to fulfill my deep desire to "make things".  I am a photographer, so when it is warm in this beautiful state, capturing beautiful people on camera fulfills this need to create, but in our blistering cold winters, not many want photographs taken, so this is when I flourish in my role as a homemaker!  Crocheting has been on the top of my list lately, the different blends of wool yarns and colors are addicting.  I am working on a large chunky throw for our living room.  For my first post,  I had to share my reason WHY I do everything I do, so here is a little peak at my boys snuggled for some photos together, I usually capture them jumping off furniture while I lay under it, so they appear to be way higher than they are.  I love capturing the true boy in them all, but I wanted to capture their love and emotion for each other as well.  Being 10, 6 & 5, they hug a lot, and I often find them snuggled together.  So here is the softer side of sweet Logan, Lucas & Landon.

Children really do teach us what life is about.  An example of this is, in the fall when it was raining, I said to Landon (5), "look at all of this rain!"  Then he states with the biggest smile, "at least there will be mud puddles!"  This is the attitude I want to have in life, and sometimes I need the reminder.  I am so grateful for my three little reminders, and mud puddles are pretty fun!
